In the early 1950s, a new health paradigm was established: saturated fats and cholesterol are harmful because they are the primary causes of cardiovascular disease. Clinical and meta-analysis studies, however, have shown otherwise. In fact, these substances, obtained from food sources or endogenously, are essential for physiological performance and good health.
The concept that its ingestion should be avoided is a fallacy, which has generated irreparable consequences for health, well-being, and even the economy. This review presents and discusses the evolutionary lipid theory, which has enabled the cognitive and expansionist development of humans.
It also focuses on the historical and biased events that have caused the marginalization of saturated fats and cholesterol, as well as presenting scientific opinions that counter this myth and offer another understanding of the true causes of cardiovascular and related diseases.
